for those of us who can take in a "few" carbs, here's a healthy recipe I created.

Recipe for Irish Oatcakes (with a twist)
¾ cup organic rolled oats
¼ cup unrefined organic flour
½ tsp salt
¾ cup warm water
1-2 tablespoons agave nectar (you can drop this and it will reduce the carbs from 8 to 5.5 per serving)
Organic virgin Coconut oil

Mix flour and salt. Add oats. Stir in warm water slowly. Add Agave Nectar. Drop onto floured board and knead lightly into 3 balls. Form into pancake size (approx. 4 inches in diameter). Fry at low heat in organic virgin coconut oil (you don’t need much oil!). Cut each “pancake” into 4 quarters. If desired, place on a cookie sheet and bake in a 300 degree oven until dried out. Recipe makes 12 quarters or “cakes” with approximately 8 carbs per serving.

Thank you. Perhaps honey would be better than the agave. Dr. Mercola doesn't like the agave because it is very high in fructose, which is harder on the body than glucose.

Yes, I'm aware of the conflicting opinions regarding agave nectar. I think that almost all sweeteners have their pros and cons. One of the pros of agave is that it has a low glycemic index in comparison to honey or sugar, but of course that's because it is so high in fructose! I think the important thing to remember is to use all concentrated sweeteners in moderation, or not at all if it's causing your body difficulties. That's why I included the suggestion to eliminate the sweetener if you want to. I probably wouldn't have used this recipe at all when I was exhibiting my most severe candida symptoms a year ago, just because I couldn't tolerate anything with larger carb quantities.
